Our creative Research and Development team has combined robust Mediterranean flavors and technical innovation, as we proudly launch our newest retail item – chicken shawarma!

Traditional shawarma utilizes fresh cuts of chicken, steak or pork; which are then blended with Mediterranean spices like coriander, cardamom, cumin, mace, cinnamon and allowed to marinate for hours.  These tender cuts are then hand-stacked on a skewer to form a reverse-tapered conic shape.  You’ve probably seen these beautifully hand crafted “cones” spinning on a vertical broiler at your favorite Mediterranean restaurant.

So why am I so excited about something that takes skilled chef’s hours to prepare, and can only be enjoyed at select restaurants?  Because we have captured the same bold flavors, succulent texture, and traditional eating experience; and have done all the work for you!  We have even taken it a step further, and included our intensely flavored marinade as a “sauce” to be enjoyed along with the shawarma.  The sauce is a perfect accompaniment when pairing the chicken with rice pilaf, roasted potatoes, or your favorite grilled vegetables.

    Hi Chef, I own a restaurant in phoenix, I would like to know the recipe for beef and chicken Shawarma (marination). I already order Kronos products.

      Thanks for the question. Below is a recipe that should work great for marinating beef and chicken shawarma in your restaurant. Good luck!

      Mix all of the ingredients except the olive oil in a blender for 30 seconds. Once thoroughly blended, add in the olive oil but only stir by hand at this point. We don’t want the olive oil to emulsify and turn this into a thick paste.

      Marinade Ingredients (for 2 pounds of meat)
      •5 cloves of garlic
      •½ cup of freshly squeezed lemon juice
      •¼ cup of apple cider vinegar
      •¼ cup of olive oil
      •1 teaspoon cloves
      •1 teaspoon salt
      •½ teaspoon cumin
      •½ teaspoon caraway (ground fennel)
      •½ teaspoon cardamon
      •½ teaspoon of oregano or thyme
      •½ teaspoon cinnamon
      •½ teaspoon nutmeg
      •½ teaspoon crushed peppercorn
      •¼ teaspoon of cayenne pepper
      •¼ teaspoon ground ginger
